Easy and Healthy Dessert Recipe - Triple Berry Crumble (AIP / Paleo / Vegan / Gluten Free)

I am super excited to share this DELICIOUS, easy, and healthy AIP dessert recipe with you guys. It’s a yummy Triple Berry Crumble the entire family will love. My five year old devoured her serving in three bites!! Since this is an AIP dessert recipe that means it is also a Paleo dessert, egg free, nut free, dairy free, gluten free, and vegan …WIN WIN! Before I get to the Triple Berry Crumble details; I am going to take a minute and explain my journey with the Autoimmune Protocol (AIP diet) and why I am eating this way. If you are just here for the easy and healthy Paleo dessert recipe feel free to scroll down (I understand) … wink wink. BUT if you are suffering from an autoimmune disease, and looking to find gut healing and reduced inflammation by starting the AIP diet yourself; then you may find my story helpful.

What is my story of gut healing and reduced inflammation?

For the last three years, I have struggled with joint pain throughout my body. At first, I thought it was just old age, although I am only 32. Then about a year ago, the joint pain started getting a lot worse, and I started having incredibly swollen joints. A lot of mornings different joints would be three times their average size. It would migrate from joint to joint. I was also breaking out in hives and itching uncontrollably. I went to my primary care doctor four times in a matter of two months. Finally, on the fourth visit we found out my ANA was positive, and the inflammation markers in my blood work were high. He sent me to a rheumatologist who ended up diagnosing me with rheumatoid arthritis.

I already knew a little about RA, because my grandfather had been recently diagnosed. After doing some research, I thought I would give the AIP diet a shot, but then I found out I was pregnant. Thankfully my RA went into remission during most of my pregnancy. Unfortunately, I had a massive flare up about four weeks after giving birth to our precious little girl. I was in intense pain and could barely hold my newborn to nurse, and some nights I would wake up screaming from the pain. My doctor started me on RA meds and a high dose of prednisone that allowed me to enjoy the time as a new mom as it would take 6-12 weeks for the RA meds to kick in.

Fast forward to October of 2017. I was SO OVER being on these meds and wanted a hope of getting off the prednisone, so I decided to start the AIP diet after Thanksgiving. I have been doing the AIP diet for two months now and being fully compliant for the first five weeks helped improve my paint drastically. The last few weeks I have had a few cheats (mainly with Starbucks), and every time I can tell a massive difference with more severe flares of pain.

I am starting FULLY again today. No cheats and more healing foods until I can start reintroducing foods. The AIP diet is not meant to be long term. The goal is to start reintroducing foods once your body is ready.

What exactly is the AIP diet (autoimmune protocol)?

The AIP diet is Paleo plus no eggs, nuts, seeds, or nightshades. If you are just researching AIP for the first time, then HERE is a great place to start. You can order the Paleo Mom’s Book for EVERY BIT of information you could need on the autoimmune protocol diet. I have her book and cookbook, and they are both fantastic!

This diet has not only started to help reduce my pain, but it has also helped me find a love for cooking. Something I had no interest in before starting. My family eats all AIP meals with me for dinner and sometimes breakfast which helps me not to feel isolated on this journey to gut healing and reduced inflammation. I am excited to continue down this path of healing, and I’m super happy to share some new delicious AIP meals and AIP dessert recipes with you all. Ideally, you don’t want to do many desserts while on AIP, but an occasional treat for special occasions is always a must…wink wink! AIP recipes are incredibly healthy; so even if you don’t eat strict AIP, they are great for you and the family!

AIP Dessert Recipe - Healthy Paleo Dessert Triple Berry Crumble

As mentioned above - this Triple Berry Crumble is an AIP Dessert Recipe … which means it is also a Paleo dessert, Egg Free, Nut Free, Dairy Free, Gluten Free, Vegan, and OH SO DELICIOUS!!

You can use frozen or fresh berries for this Triple Berry Crumble Paleo dessert. I used the Walmart brand frozen organic triple berry mix this time around. You need to defrost the berries first before using them in the recipe. I used the microwave to defrost mine.

Some of the ingredients for this AIP dessert recipe are not typical grocery store finds, but you should be able to find them at your local health food store like Whole Foods, or you can order them online. I like to order all of mine from Amazon or Thrive Market because it saves me a TON of money! Surprisingly though regular grocery stores like Walmart are starting to carry more healthy food options.

The recipe card below has the recipe set for Paleo dessert as the main ingredients option, and the AIP dessert recipe version is in parenthesis.

AIP / Paleo / Vegan Triple Berry Crumble

Delicious and healthy dessert the entire family will love! This Triple Berry Crumble is AIP, Paleo, Vegan, Gluten Free, Egg Free, Dairy Free, and Nut Free.

Ingredients

  • FILLING
  • -6 cups fresh or frozen berries (aprox 3lbs if using frozen in bags)
  • -1/2 tsp vanilla extract (vanilla powder for AIP)
  • -1/2 tsp nutmeg (clove for AIP)
  • -1/2 tsp ground cinnamon
  • -1 tsp maple syrup
  • -1 tsp arrowroot starch/flour
  • -2 Tbsp fresh lemon juice
  • CRUMBLE TOPPING
  • -2 cup almond flour (1and1/4 cup cassava flour & 3/4 cup coconut flour for AIP))
  • -1/4cup + 2 Tbsp granulated coconut sugar
  • -1/2 cup melted coconut oil
  • -Pinch of sea salt

Instructions

  1. Preheat oven to 375 degrees
  2. If using frozen berries then you must thaw first (I poured my frozen bags into the 9x13 glass baking dish and placed in the microwave for a few minutes until completely thawed). If using fresh berries then measure out your amount and place into your 9x13 baking dish.
  3. Use a large spoon to mix your FILLING ingredients in with your berries in the 9x13 baking dish.
  4. Mix all of your crumble toppings EXCEPT your coconut oil in a separate mixing bowl.
  5. Add your melted coconut oil to the bowl and mix with hands until you create small crumbles. You may need to add more melted coconut oil depending on the brands of flour you used (the textures vary). If you need to add more just slowly add a little bit at a time.
  6. Spread your crumble over the top of your berries.
  7. Bake on the middle rack for 30-40 minutes or until crumble topping is golden brown and berries are boiling.
  8. Let cool and serve. This dish freezes well.

Recipe Notes

Be sure to read the instructions on using frozen berries for this delicious and healthy AIP dessert. The filling mixture won't stick to the berries or mix well if they are not thawed. I created this recipe for myself using the AIP substituitions, and it was delicious.
